Workforce now represents a major item in the production cost of hog.

Workforce now represents a major item in the production cost of hog. The concentration of hog structures, spectacular during the last 25 years, has been made possible by technical developments, together with the constant improvement of the workforce productivity. Work organisation, working conditions, and the very nature of workforce have undergone important changes : growing specialisation of persons, more and more common employment of salaried workers. However there are still noticeable differences in work efficiency depending on the region, the type of hog unit (breeding, fattening or both) and its size. Hence one may predict the continuing of structural concentration, while economies of scale are still possible.
